INGREDIENCE
KŘEHKÉ TĚSTO
200 g másla pokojové teploty
300 g hladké mouky
1 lžička prášku do pečiva
80 g pískového cukru
¼ lžičky vanilky
JABLEČNÝ KOMPOT
250 g jablek
50 g cukru
1 lžička mleté skořice
1 dl vody
1 lžíce cukru
1 lžíce skořice
papírové košíčky
cukrářský sáček
POSTUP
JABLEČNÝ KOMPOT
1. Oloupeme jablka a nakrájíme je na malé kousky.
2. Přendáme je do hrnce a smícháme s cukrem, vodou a skořicí. Vaříme, dokud jablka nezměknou.
3. Odstavíme z ohně a rozmixujeme do hladka. Necháme vychladnout.
KŘEHKÉ TĚSTO
1. Troubu předehřejeme na 200 stupňů.
2. Máslo vyšleháme s cukrem a vanilkou. Šleháme do nadýchané světle žluté směsi.
3. Mouku a prášek do pečiva smícháme zvlášť v míse a postupně přisypáváme do mísy s máslovou směsí. Dobře promícháme do hladkého těsta.
6. Pečeme uprostřed trouby asi 10–12 minut (podle velikosti – menší budou spíš tak 10–12 minut, větší těch 12–15).
DOKONČENÍ
1. Smícháme skořici a cukr
2. Upečené sušenky necháme trochu vychladnout a posypeme skořicovým cukrem. Pokud posypeme hned, cukr se rozpustí. Pokud necháme trochu vychladnout, krystalky cukru zůstanou – takže záleží i na vašich preferencích.
I can never get enough cookies, and certainly not these types of cookies.
The recipe is inspired by the Swedish raspberry cookies Hallongrottor (translated as Raspberry Cave), only they got an autumn version and smell of apples and cinnamon. The cookies are full of butter; they are fragile and a bit reminding of Linzer cookies. In the middle there is a hole filled with apple compote with cinnamon and on top they are sprinkled with cinnamon sugar. Simply the perfect cookie for autumn baking.
(Not to mention, the cookies are ready in no time).
Note: If you don't want to or have time to prepare apple compote, you can use a ready-made apple puree.
INGREDIENTS
SHORTCRUST PASTRY
200 g butter at room temperature
300 g all-purpose flour
1 teaspoon baking powder
80 g granulated sugar
1/4 teaspoon of vanilla
APPLE PURÉE
250 g apples
50 g granulated sugar
1 teaspoon ground cinnamon
1 dl of water
1 tablespoon sugar
1 tablespoon cinnamon
paper cups
pastry bag
INSTRUCTIONS
APPLE PUREE
1. Peel the apples and cut them into small pieces.
2. Transfer them to a saucepan and mix with sugar, water and cinnamon. Cook until the apples are soft.
3. Remove from heat and blend until smooth. Let it cool.
SHORTCRUST PASTRY
1. Preheat the oven to 200 degrees.
2. Beat the butter with sugar and vanilla. Whisk until the mixture is fluffy and light yellow.
3. Mix the flour and baking powder separately in a bowl and gradually add to the bowl with the butter mixture. Mix well into a smooth pastry.
4. Divide the pastry into equal pieces (according to the size of the cupcakes) and roll them into balls. Put them in paper cups or muffin tins and make a hole in the middle (using a wooden spoon).
5. Fill the holes with apple purée (I used a pastry bag for the filling, but it should also be possible to use 2 smaller teaspoons).
6. Bake in the middle of the oven for about 10-12 minutes (depending on the size – smaller ones will be more like 10-12 minutes, larger ones 12-15).
FINAL STEP
1. Mix cinnamon and sugar
2. Let the baked cookies cool a little and sprinkle with cinnamon sugar. If you sprinkle right away, the sugar will dissolve. If you let it cool down a bit, the sugar crystals will remain – so it also depends on your preferences.
